In this season of giving, local author Andrea Cassell shared her talent of cooking to raise money for Putnam Community Resources and the Greene County Food Pantry. The fundraiser, Cooking for a Cause, was sphere headed by Connie Karpinsky with The Episcopal Church of the Redeemer and raised $900 for the less fortunate in the community.
In the video, Cassell shared her recipe for Apricot Baked Chicken. The recipe is in her cookbook, “Nahima’s Hands: Unique Mediterranean Cuisine.” Nahima Albert, Andrea’s grandmother, shared her love for her family in the kitchen and the cookbook was a way to pass on those recipes to her children and grandchildren. The book became very popular and was sold at Kroger, bookstores and restaurants.
“Nahima’s Hands: Unique Mediterraen Cuisine” features Mediterranean healthy dishes which are easy to prepare, including appetizers, salads and dressings, rice and legumes, soups, vegetables, gluten free, beef/pork/chicken, desserts and breads, several dishes with wine pairings and a slow cooker section. The cookbook also features original recipes from Andrea Cassell.
“In light of the pandemic, we have found ourselves spending a lot of time in our kitchen. It was my pleasure to share my grandmother’s recipe with the community and raise money for this very worthy cause.”
